Summer equals sunshine, fresh air, long days and of course fresh berries. The weather has improved quite a bit the last few days and there's no better way to enhance a lazy Sunday BBQ than with a fresh, healthy and good-looking salad.
Lately I've been serving salads on a platter instead of a bowl because it looks so pretty. Even the men and children are inspired to eat salad if it looks more appetising. It's also easier to dish up from a platter - allowing you to get a piece of everything without 'digging for the good stuff' at the bottom of a bowl.
I first served this salad with only spinach, strawberries and feta and while it was still delicious, the addition of the rocket/arugula, avocado and pine nuts gives it much more texture and flavour. I added pine nuts to this particular dish, as that's what I had in the cupboard, but it tastes just as great with roasted sunflower seeds or even walnuts. Roasting the nuts enhances it's 'nuttiness' and adds a delicious crunch.
