Vegetarian low-carb meals 1

Earlier this year, I promised to share some vegetarian low-carb high fat (LCHF) meal option.Â

First, I like to rename the LCHF acronym to (S)low carb healthy fat. Partly because some of my recipes do contain healthy, complex carbohydrates (such as sweet potato) and partly because the "high fat" part still seem to put people off trying LCHF options.Â
Â
Studies like the recently published one on cheese consumption not raising the risk of of heart attack or stroke, are slowly debunking the fat myth. However,  we've still got some work ahead of us to convince the public that refined carbohydrates, not fat, is the enemy.Â

Secondly, why vegetarian? Because it's cheap, it's healthy, it's easy, it's delicious! Mostly, it's because it increases the amount of vegetable portions in a day. The Imperial College London recently released a study suggesting that 10 portions of vegetables and fruit a day (not 5)Â offers maximum benefit when it comes to disease risk reduction and optimum health.Â

One of my household's favourite meals is this Greek Zoodles recipe. I used to buy the zoodles (spiralised zucchini/courgette) pre-made, but recently invested in a spiraliser. It's a whole load of fun making your own spiralised vegetables. I'm also having loads of fun experimenting with new recipes, so watch this space.Â

This meal took me 20 minutes from start to finish (including the spiralising) and it went down a treat.
