Summer came to an abrupt halt here in the Netherlands. Although it wasn't a particularly warm summer, we had a few BBQ's which gave me the opportunity to experiment with some side dishes - usually vegetable heavy dishes.
This recipe is so versatile and can be made in with different cheeses or you can swap the aubergine for courgettes/zucchini. The dressing can be adapted according to taste.
I've made this aubergine tomato layer dish a couple of times in the last few months and it never comes out the same. Don't be afraid to experiment!
